In 2019, she wrote and illustrated her first published Children’s Picture book, When Your Cookie Crumbles. While her background is in Literature, her true love language is in Psychology and Behavioral Health. In her free time, she enjoys practicing various forms of Yoga, as well as reading about philosophy, psychology, and re-watching classic comedies such as Seinfeld.

Biographical Guide co-edited with Marion Ann Taylor (Baker Academic 2012) : View Book Biography Agnes Choi teaches courses in biblical studies, with a focus on Second Temple Judaism and early Christianity. Her teaching and research considers how the ancient texts should be understood in their ancient contexts. Her research currently focuses on the ancient economy and the impact of the economy on the urban-rural relationship, as well as the interpretation of the parables of Jesus.

Prior to joining PLU, Dr. Liu served as an assistant professor of accountancy at the University of San Diego. She also has international teaching experiences in China.
